Liquid Nitrogen is nitrogen in a liquid state at low temperature (−195.79 °C, −320 °F), is widely used to cooling and cryogenic applications like food preparation.

- Air contains 78.09% nitrogen, 20.95% oxygen and other gases.
- Nitrogen is inert, non-toxic, odorless, colorless, and is not flammable.
- Liquid nitrogen is produced commercially by distillation of liquid air.
- Liquid nitrogen is denoted as LN2, LN, or LIN.
- Liquid nitrogen boils at 77 K (−195.8° C or −320.4° F).
- Nitrogen gas is lighter than air when it reaches room temperature. It is slightly soluble in water.
- Liquid nitrogen is stored in special insulated containers that are vented to prevent pressure buildup.
Making Ice Cream with Liquid Nitrogen
The extremely low temperature of the Nitrogen when gets in contact with the cream makes the cream lose the heat so fast that there is no time for the ice crystals to build up.
